Gotu Kola Soup
A deliciously, healing soup- for both the mind and the nerves! Gotu Kola is a beautiful plant. When I was in Bali it grew in abundance and was served heartily on pizza, salad and as a garnish! Here at home I use Gotu Kola weekly to cool the mind and support the nervous system. Gotu Kola is a peripheral vasodilator meaning it opens capillaries and increases circulation- particularly to the brain. If you are noticing a busy mind or feelings of anxiousness, try this soup or enjoy dried Gotu Kola leaves as a soothing tea.
Gotu Kola Soup
1 cup red raw rice or basmati rice
3 cups water
1 cup rehydrated gotu kola leaves, chopped
3 cups coconut milk (can sub with plain water, it will just be more brothy than soupy.
1 tsp grated ginger
2 cloves chopped garlic
1 tsp lemon juice
Pinch salt
1 lump jaggery, to taste (optional)
To make,
Wash rice, add salt and water. Boil until rice is cooked and very soft.
Add 1 cup of coconut milk (or plain water) with herb leaves, ginger and garlic and combine well in a blender.
Add mixture to cooked rice, add remaining coconut milk and bring to a boil.
Adjust salt and add lemon juice according to taste.
Serve hot with jaggery (optional).
